Recipe

Terere, mate over ice 10 minutes · Serves 1 gourd, shared

Crush a handful of mint and the juice of one lime into a jug of very cold water and add ice.
Fill the gourd two thirds with yerba, tilt it to a slope, and set the bombilla in the low side.
Pour the cold water down the low side, never over the dry leaf.
Drink it down and refill. Cold water pulls slower, so it lasts longer than hot mate.
